The older I get, the more I realize that everything truly does have a season. I'm better at letting things naturally ebb and flow than I used to be. I lean into a current yearning, loosen on another, then maybe back again without feeling bad. Some weeks we feel like we are surviving, other weeks we are intentional.
In this slower season after the busy holidays and closing our neighborhood shop, I'm making an effort to be intentional about our meals at home and prioritizing quieter routines. Instead of packing our schedules full (of which I can be guilty), I'm planning for slower evenings at home, really good meals, quiet nights.
It feels like such a treat to be able to give attention (and intention...) to what I'm making for dinner. Instead of an afterthought, I am gifting myself time to hunt for recipes, get inspired, shop and prep - making it a true priority for my day.
We started focusing on eating more balanced, whole foods last January. We notice that we just feel better - and we have found foods that we really do love and crave. I've included some favorites dinners (that check all of the healthy, balanced, fiber, protein, nutrient boxes for us) in this season's Recipe Cards.
I know that I can always make a quick dinner with a healthy protein if I have (high quality, wild caught shrimp in the freezer. Shrimp Scampi is one of my all time favorites. The gremolata topping is my new obsession and gives so much flavor.
I could eat pasta every day of the week. We definitely do still eat pasta regularly at home, but if I feel like I want to lighten it up, I use spaghetti squash instead. The shocking thing? Sometimes we actually like it better. I especially love meatballs and tomato sauce or anything lemony goes great with it, too.

Chicken soup doesn't always sound like enough for me. I am always looking for a little more flavor and interest. This Green Chile Chicken Soup is something I can make for dinner and still crave it for lunch the next day. My whole family loves this.
Of course, the homemade chicken stock is the game changer for all soups and healthy eating at home. Just making it makes you feel better. I have some big theories on overall health and homemade stocks - they are so healing and nutritious. You will never look back after you start making your own. I find the process really helpful for meal prep and stocking our freezer, too. But I'll save that for another post.
